Garlic-Roasted Broccoli & Vintage Cheddar Quiche

This quiche is made using a seeded spelt shortcrust pastry with a creamy free-range egg filling, and a unique combo of vintage Somerset Cheddar, tangy Red Leicester and nutty Emmental to bring a deep, savoury richness. We hand-finish it with garlic-roasted broccoli and a parsley and Emmental crumb. We’ll be donating £5,000 from the sales of this quiche to the British Hen Welfare Trust (registered charity no. 1147356) to celebrate their achievement in rehoming one million ex-commercial laying hens.
