Inside, you’ll find recipes for a whole host of different occasions. ‘Everyday Veg’ is a whole chapter dedicated to delicious weekday suppers that are easy to whip up and an easy way to sneak some veg into the kids. Our Veg-packed Bolognese is a scrumptious alternative to the traditional meat-based dish, whilst our vibrant One Pan Pearl Barley and Herb Risotto switches classic risotto rice for something a little lighter. 

For when you’ve got a little more time on your hands, ‘Veg Feasts’ offers a whole host of dazzling dishes that are guaranteed to wow dinner guests. The Whole Roasted Cauliflower with Crispy Potatoes & Greens is a brilliant centrepiece and a perfect example of how veg can take pride of place in the centre of the plate.

Then, there’s also Veg on the Go, a chapter dedicated to recipes that are perfect for lunchboxes (for kids and big kids alike!) or eating on the hop. Our Scotch Veg Eggs with Tomato Chutney are a brilliant meat-free take on this classic British snack whilst the Cherry Tomato Focaccia not only looks pretty, it’s tastes pretty darn good too!

Finally, we just couldn’t resist a chapter dedicated to Sweet Treats. From Courgette & Lemon poppy Seed Bars to Chocolate Beet Brownie Cups, which are a personal highlight - hiding veg in a pud, what could be better?

During our journey of writing this book, we can honestly say that we’ve enjoyed cooking with and eating, more veg than ever before and we hope that we can inspire you to do the same.
