Serves:

8 Fritters

Ingredients

  • 2 tablespoons plain flour

  • 200g courgettes, grated or spiralized

  • 2 handfuls of baby spinach, washed and dried

  • 1 small bunch of chives, very finely chopped

  • 2 large eggs, beaten

  • 30g Vegetarian hard cheese, grated

  • 100g soft goats’ cheese

  • A knob of unsalted butter and a glug of oil, for frying

  • Salt and freshly ground black pepper

Method

  1. 1

Measure the flour into a mixing bowl, add the courgettes and toss them around to coat them in the flour. Add the spinach and chives and toss again to evenly distribute the veg.

  2. 2

Pour in the beaten eggs, season generously with salt and pepper and stir well. Add the Parmesan and crumble in the goats’ cheese, then stir again to combine.

  3. 3

Set a large frying pan over a medium heat and add the butter and oil. Once the fat is hot, carefully add dollops of the fritter mixture to the pan and cook for a couple of minutes, then flip over and cook for a further 2 minutes. Serve immediately.

    Tip

Use potato flour in place of plain flour for a gluten-free option.
