We think hands are great. They can do anything. Like playing a violin and giving a massage. Our hands get really tired because people keep eating pies. But we still insist that every single little pie is finished by a pair of higgidy hands.
“Without hands we would never be able to judge when the pastry was mixed to just the right consistency – it might end up being greasy and flaky or tough and shrunken. If we wanted to use our hands less, we would also have to simplify our recipes and ideas. We couldn’t crumble feta on our Spinach and Feta Pie and we couldn’t make the twiddly pastry folds on our individual pies.”
