Spinach, Feta & Roasted Red Pepper  \n    Quiche

We created this little quiche by piling delicious fresh spinach, feta, cheddar and free range egg into Camilla's special seeded shortcrust pastry case, then sprinkling it with lots and lots of lovely roasted red peppers...

What we suggest...

This little snack pack is designed to be extra convenient for your lunch box. If you'd like to spice things up a little, we suggest a Higgidy Tabbouleh salad...

Higgidy's Tabbouleh Salad

  • 225g bulgur wheat
  • 50g parsley, finely chopped
  • 40g mint leaves, finely chopped (no stalks)
  • 6 spring onions, finely chopped (including green parts)
  • 4 tablespoons fresh lemon juice
  • 5 tablespoons olive oil
  • Salt and freshly milled black pepper
  • 15cm cucumber, finely chopped
  • 1 red pepper, finely chopped
  • 225g cherry tomatoes, chopped into quarters
  • 1 small cos or little gem lettuce, finely chopped
  1. Prepare the bulgur wheat according to the on pack instructions.
  2. Combine the prepared parsley, mint, spring onions, lemon juice, olive oil, salt and pepper, stir into the bulgur wheat and leave to 'soak' for about 30mins.
  3. Combine all the remaining ingredients in a large bowl, then add the bulgur wheat mixture. Using your hands combine all the ingredients together, pile into a bowl and serve with warm Little Moroccan Vegetable and Feta Pies straight from the oven.

Spinach & Feta Free Range Egg Filling contains: Béchamel Sauce (33%) (Water, Skimmed Milk Powder, Butter, Wheat Flour, Cream (5%), Cornflour, Mustard Powder),  Free Range Whole Egg (22%),  Mature Cheddar Cheese (12%),  Spinach (10%), Feta  Cheese (9%), Onion (8%), Cornflour, Water, Salted Butter, Rapeseed Oil,  Nutmeg, Stabiliser: Pectin,  Salt, Black Pepper.

Hello, just want to say that I really do enjoy your Spinach, Feta & Roasted Red Pepper Quiche….. Being a vegetarian, it’s one of the best veggie options out there. It’s 100% deliscious!!!!!!! everytime. It’s a treat to myself a few times a month. Also I would like to say that I love the packaging, that it’s 100% re-cyclable which is excellent! & I do enjoy the joyful verses, the ‘happy Chicken sketch, the welly boot, all the drawings, the colours too. ’Higgidy: the peaceful pastry makers’….. that’s cool! The time was ripe for a veggie option which went beyond the ordinary cheese or egg sandwiches that most places provide – it was good to see that Boots was finally supplying something beyond the ordinary. I would say for a small cold quiche the crust was surprisingly appetising and the filling combination was surprising and varied. I look forward to seeing more of your veggie recipes in this form!
