I want cooking to be fun. This recipe book came about largely because my friends and family are looking for inspiration and often ask me for a quick and easy recipe for a lunch, tea, supper or special occasion, for some reason they trust me and they know that given I have 2 children my recipes must be no-nonsense and reliable!
I love preparing meals at home, smells wafting out of the kitchen, laying the table, lighting little candles, folding the napkins and welcoming friends into our home.
I think nothing beats the feeling of sharing a meal together, feasting, eating, sharing stories and laughing together. Here I’m beginning to gather some of my favourite recipes that I hope you’ll enjoy and that will result in 'happy endings'.
I love these flap jacks. They aren’t the fudgey fall-apart-sort instead this recipe makes a crunchy more biscuit-like flap jack that actually tastes sort of healthy! They’re really easy and quick to make and the bonus is that they can be packed up in some foil or an air tight container and if they are bounced around in a back pack on the way to the beach I think they’ll arrive in one piece.
This is a real winner. The stem ginger gives it a lovely chewy almost fudgey texture and just like the flapjacks they don't fall apart and are easy to pack into a picnic box and transport. Delicious with a thermos of hot tea if you're spending a windy day on a British beach!
Please don’t be put off by the long list of ingredients that go into these scones, they’re actually really easy to make and are delicious eaten with some cream cheese flavoured with roughly chopped fresh herbs or some soft creamy goats cheese. Depending on the occasion I’d suggest making tiny weeny ones if you’re sharing your picnic with a large group or make more traditional sized scones for the family and serve with a thermos of hot soup (we’d eat these after a days surfing on a rather cold Cornish beach).
