Here is a traditional Lebanese salad made with bulgur wheat (also known as cracked wheat and is widely available in supermarkets and health food shops). You can vary the proportions of bulgur wheat to veggies and herbs, so just use the recipe below as a guide.
- 225g bulgur wheat
- 50g parsley, finely chopped
- 40g mint leaves, finely chopped (no stalks)
- 6 spring onions, finely chopped (including green parts)
- 4 tablespoons fresh lemon juice
- 5 tablespoons olive oil
- Salt and freshly milled black pepper
- 15cm cucumber, finely chopped
- 1 red pepper, finely chopped
- 225g cherry tomatoes, chopped into quarters
- 1 small cos or little gem lettuce, finely chopped
- Prepare the bulgur wheat according to the on pack instructions.
- Combine the prepared parsley, mint, spring onions, lemon juice, olive oil, salt and pepper, stir into the bulgur wheat and leave to 'soak' for about 30mins.
- Combine all the remaining ingredients in a large bowl, then add the bulgur wheat mixture. Using your hands combine all the ingredients together, pile into a bowl and serve with warm Little Moroccan Vegetable and Feta Pies straight from the oven.
