Everyone was mightily impressed by Phillippa’s soft fruity Cheesecakes at lunch today.
“They’re my mum’s recipe” she said.
"Can we put the recipe on the website?" we asked nicely? And here it is...
- Half a pack of digestive biscuits
- 75g butter
- 450g of cream cheese (about one and a half packs)
- 70g icing sugar
- 1 teaspoon of vanilla extract
- 1/2 teaspoon lemon juice
- Half a pint of double cream
- Bash the digestives until they become fine crumbs then add the butter (softened) and mix.
- Press into the base of a loose bottomed tin and put in the fridge for a bit.
- Wisk together the cream cheese, Icing Sugar, lemon juice and the vanilla.
- Whip the double cream and then fold into the cream cheese mixture, spread on the biscuit base and chill over night
- Decorate with fruit and warmed jam.
