Crostini

These are really useful and you can store them in an air tight container for up to 2 weeks. You can substitute the baguette for ciabatta or foccacia that might be beginning to go stale.

Ingredients:

  • 20 slices day-old baguette, 1cm thick
  • 4 tablespoons olive oil
  • garlic clove (optional)

Need oven tray. Pastry brush

Method:

  1. Pre-heat oven to 350*F (180*C) Gas 4
  2. Place baguette slices on oven tray
  3. Brush with olive oil (if you like you can also rub with cut side of garlic clove for more flavour)
  4. Bake until crisp and lightly golden, about 10 minutes
  5. Cool on wire wrack

Serve with hummus, a chunky guacamole or with our smoked mackerel pate (see below).
