Higgidy

Broccoli, Green Bean and Feta salad

This a great with a Higgidy quiche or tartlet. You can assemble it the day before you need it then I would toss everything in dressing up to few hours before you need it.

Ingredients:

  • 200g broccoli florets or tender stem
  • 200g green beans, ends cut off
  • 100g bean sprouts
  • 100g feta cheese, broken into small chunks
  • handful of seeds of your choice eg pumpkin, sunflower, sesame.

Dressing

  • 6 tablespoons of olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1 large clove crushed garlic
  • salt and pepper to taste

Method:

  1. Steam the broccoli and green beans for 4 minutes, refresh under cold water and leave uncovered.
  2. Once completely cold combine above with bean sprouts, feta and seeds.
  3. Place all ingredients for dressing except oil in jar and give good shake, (mustard and honey dissolve better without oil). Add oil and shake again.
  4. Dress salad just before serving.
