Spinach, Feta & Roasted Red Pepper Quiche

Seeded shortcrust pastry stuffed with leaf spinach, mature cheddar and sautéed onions in a creamy free range egg filling topped with crumbled feta and roasted red peppers.

What we suggest...

Our Spinach and Feta Quiche is nicely rounded off with some Oven Roasted Vine Tomatoes and a wodge of fresh crusty bread.

Oven Roasted Vine Tomatoes

  • 600g cherry tomatoes, on the vine
  • tbsps olive oil
  • Sea salt and freshly milled black pepper
  • Fresh basil leaves
  • Balsamic vinegar
  1. Pre-heat the oven to gas mark 6, 400°F, 200°C.
  2. Toss the cherry tomatoes in the olive oil.
  3. Season with sea salt and freshly milled black pepper.
  4. Place on a roasting tin and roast for 15-20mins or until the skins are turning gliden and wrinkly.
  5. Serve with torn fresh basil leaves and a splash of balsamic vinegar and a warm Higgidy pie.

Ingredients:

Creamy Cheddar and Spinach Béchamel Filling [67%], Seeded Shortcrust Pastry [23%], Roasted Red Peppers [5%], Feta [3%] + Lots of Hard Work.

Creamy Cheddar and Spinach Béchamel Filling contains: Béchamel [39%] (Water, Skimmed Milk Powder, Butter, Wheat Flour, Double Cream, Mustard Powder, Cornflour), Mature Cheddar Cheese [16%], Spinach [16%], Onion, Free Range Whole Egg [9%], Cornflour, Water, Rapeseed Oil, Butter, Nutmeg, Stabiliser: Pectin, Salt, Black Pepper.

Seeded Shortcrust Pastry contains: Wheat Flour, Butter, Non-Hydrogenated Vegetable Shortening, Medium Fat Hard Cheese, Poppy Seeds, Sesame Seeds, Cayenne Pepper.

All ingredients are suitable for vegetarians.

Question, do you make a large sized caramelised onion and balsamic quiche??

You know what makes them even better? Your whole companies attitude and values and the way things are done. I was recommended this quiche by a colleague but ended up being quite disappointed by it. I didn’t find the pastry particularly buttery, and the cheese was not as good as it could be. Certainly I have had better cheese from Tesco before.

I thought you might appreciate the feedback as usually your quiches are top notch. Do you have a recommendation for another good quiche to try?

But i gave your little lunch time one a go (bought it boots) and I LOVE IT!!! I wish it was bigger, i could eat 10 for my lunch! and like i said, i wasnt even that mad on quiche before this! I have just finished your Spinach, feta and red pepper quiche. It was scrumptious. I usually buy Sainsbury’s quiches but decided to try one of yours and it was worth all the extra 100 pennies I paid for it. I don’t think I can ever eat a supermarket branded quiche again!

P.S. I haven’t tried your pies yet as I am not keen on the fillings, how about you do something like spicy sweet potato with peas and cauliflower.
