Smoked English Bacon & Mature\n   Cheddar Quiche

Seeded shortcrust pastry crammed with mature cheddar and sautéed onions in a creamy free range egg filling, topped with smoked English bacon lardons.

What we suggest...

This quiche works well cold, but when you pop it in the oven it really brings out the flavours and aroma of the bacon and cheese. If so inspired, try serving with a green leaf salad tossed in garlicky vinaigrette.

Garlicky Vinaigrette

  • 1 teaspoon sea salt
  • 2 cloves garlic, peeled
  • 1 teaspoon sugar
  • 2 teaspoons dijon mustard
  • 2 tablespoons sherry vinegar
  • 150ml extra virgin olive oil
  • Freshly milled black pepper
  1. Place the salt and garlic cloves in a pestle and mortar and crush it against the side of the bowl. Quite quickly it will become a paste. Add the sugar, mustard and vinegar and after about 30 seconds of circular movements the ingredients should all be evenly combined.
  2. With a small whisk add the oil.
  3. Toss over the prepared salad leaves.

Your quiches are GORGEOUS! I’m a bit addicted to them. I and the family are keen cooking-from-scratch cooks so we don’t like any old rubbish, but these are easily as good as home-made.

Higgidy Ham and Cheese Quiche served with a freshly made vegetable chilli. Put a dollop of yoghurt on the chilli. I like some lime pickle with the quiche.
