Hand folded shortcrust pastry filled with a creamy turkey, bacon and parsnip stew, layered with a traditional sausagemeat stuffing of sage, onion and leeks and topped with a puff pastry hat
I only ever make this in the winter. It’s delicious with our Christmassy Pie or very tasty with some good local sausages and some creamy mashed potato. This recipe makes quite a big batch so you could freeze half the batch... and it can be reheated.
- 1 red cabbage (about 1 kg)
- Pinch of salt and freshly milled black pepper
- 4-5 large-ish cooking apples, peeled, cored and sliced
- 2 red onions, sliced
- 1 garlic clove, crushed
- Pinch of nutmeg
- Pinch of cinnamon
- Pinch of cloves
- 1 heaped tablespoon of red currant jelly
- 3 tablespoons of red wine vinegar
- 2 heaped tablespoons of soft brown sugar
- Large Knob of butter
- Pre-heat the oven to gas mark 2, 300°F (150°C).
- First discard the tough outer leaves of the cabbage, cut it into quarters and remove the hard stalk in the centre. Use a sharp knife and roughly shred the cabbage.
- In a fairly large casserole or heavy pan (I like Le Crueset) arrange a layer of cabbage, season with salt and pepper.
- Layer with slice apples, sliced onion, a sprinkling of garlic, spices and sugar. Continue with these alternate layers until everything is in.
- In a small saucepan, warm the red currant jelly with red wine vinegar, soft brown sugar and butter. Pour over the cabbage.
- Put a tight lid on the casserole and place in the oven set at Gas Mark 2, 300ºF, 150ºC and cook very slowly in the oven for 2-2½ hours, stirring everything around once or twice during the cooking.

Every now and then I really fancy a Higgidy and off to the supermarket I go in search of one that is veggie friendly with no mushrooms (allergic to them) and without any goats cheese (augh hate goats cheese).
I remember buying one or two a long time ago that suited my awkward requirements but, usually when I get to the supermarket they dont have what I want ie only meat ones or contain mushroom or goats cheese. Cant even remember the one I really liked it was so long ago!!!!

We tried one of your chicken ones first and were really impressed by the taste and filling.
Last night we had your new Christmas Pie and both really enjoyed it, so much so we could have eaten it again!
For my wife to be so impressed is amazing, normally she is so disappointed at the horrid pastry and lack of filling, but now she is a real convert. Keep it up! Wife says ‘What about a salmon filling?’

However it does sound good and hubby has told me how nice it is. My favs are still the chicken and leek and beef pie but my local stores aren’t selling them like they used to so Higgidy please start to sell them direct.
