Higgidy

British Beef, Stilton & Ale Pie

Our traditional short crust pastry case is deep filled with a rich steak, ale and English Stilton stew, then topped with a heap of potato mash. Our stew is simply made with carefully selected cuts of British chuck steak simmered very slowly with in a rich beef stock with a generous slug of ale.

What we suggest...

When we really want to look like serious cooks we pop the higgidy Beef, Stilton and Ale Pie in the oven and get busy making some Garlicky Green Beans. With a big glass of red wine it's got to be one of the best ways to end your day

Garlicky Green Beans

  • 500g / 1 lb green beens
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 coarsely chopped garlic cloves
  • a little grated lemon peel and a squeeze of the juice
  1. Cook beans in large pot of boiling salted water until crisp-tender, about 4 minutes. Drain. Run them under cold water to cool.
  2. Melt the butter with the olive oil in heavy large skillet over medium-high heat.
  3. Add garlic; stir for 30 seconds. Add beans; sauté until heated through, about 5 minutes.
  4. Stir in lemon peel and squeeze of lemon juice. Season with sea salt and cracked black pepper. Can be served hot or at room temperature.

Beef, Stilton & Ale Stew [48%], Potato Mash [31%], Shortcrust Pastry [19%].

Beef, Stilton & Ale Stew contains: British Beef Steak (50%), Onion, Tuxford & Tebbutt Stilton (12%), Mushroom (8%), Ale (5%), Beef Stock (Beef Bones & Meat, Water, Tomato Paste, Onion, Carrot), Wheat Flour, Worcestershire Sauce (Malt Vinegar, Spirit Vinegar, Molasses, Sugar, Salt, Anchovies, Tamarind Extract, Onion, Garlic, Spices, Flavourings), Cornflour, Colour: Plain Caramel, Thyme, Salt, Black Pepper.

My partner went to Sainsbury’s last night. Did I want anything he asked. Pie I replied. Sweet? Savoury? It didn’t matter, I had had a bad day at work and I wanted pie.

However our first love is the balsamic onion and cheese quiche. The only problem is our local sainsburys and waitrose never seem to have it in stock, not even a label to say that its been there. so we were wondering, is there a supply issue at the moment with this particular quiche? i have been able to purchase some of the mini versions from waitrose online today. It would be great if you could let me know when they are going to be available.

I’ve become a huge fan of your pies lately. I get them at the Haywards Heath Sainsburys. I love cooking but sometimes I’m just too knackered and frankly they’re the only things there that don’t smell of whatever it is they stick in all their other ready-meal products. They’re a real treat warm in my packed lunch at the nursery too. They only sell the chicken and ham and the feta and pine nut as far as I can see but both are excellent. Nice to see it’s a local firm too – I grew up in Southwick.

What a pie.. rough cheesy mash, decent short crunchy pastry and a filling with more flavour than a family gathering of the Flavour clan. The beef was melt in the mouth, the Stilton gave a creamy twang and there was a mellow backdrop of ale in the gravy. I had to read the ingredients to see where the wholegrain mustard was coming from.. the mash.. a great touch.

So.. I’ve finished now, have managed to get a bit of gravy onto my tablet screen but nonetheless.. I haven’t enjoyed a shop-bought pie this much probably.. ever. I shall certainly be trying others.

This is an absolute favourite of ours. We recently tried some pies by ‘someone else’ that look a bit like Higgidy. Never again….
We have tried several of the other pies and quiches in the Higgidy range, all lovely but this is our favourite. It has real meat in eat and you can tell it is unlike some who put a brown mushy substance in their pies which is supposed to be meat. We know what the real thing looks like because I do make my own but don’t always have time or feel like it. Higgidy are the only pies I will buy.

However, I liked the packaging and thought I’d risk it for my tea (you’d say supper in Shoreham). I was very pleasantly surprised at how beautifully home-made it was. Since browsing your site I see you also do a butternut squash & a Sausauge & Mash pie which I did not see on our Sainsbury shelf but will have to double check next time and see if my my partner can check in Waitrose. Look up “perfect” in the dictionary and there’s a picture of a Higgidy pie! I don’t know what’s better, your fillings or your crust! I have never been a crust person.
