The higgidy likes?

We like HANDS

We think hands are great. They can do anything. Like playing a violin and giving a massage. Our hands get really tired because people keep eating pies. But we still insist that every single little pie is made by a pair of higgidy hands

We like WIGGLINESS

People are different. We like that. It would be really boring if we were all the same. It?s the same with pies. Camilla?s Lemon Chicken Pie is really zingy and her Beef, Stilton and Ale Pie is hearty and wintery. And because we line each tin by hand the edges are all a bit wiggly so no two higgidy pies are ever quite the same.

We like TIME

We love to make sure that our pies are perfect. That takes time. The longer that you cook a beef stew the better it gets. That?s why we cook our beef stew with lashings of beer and for a full three hours. Some people would get bored of waiting. But we know that it takes this long to get it right.

We like GOOD INGREDIENTS

We only put the nicest things inside our pies. We try to get all our main ingredients from Britain ? like beef, chicken, pork, flour, potatoes..etc. We try to buy free range meat and we always use free range eggs. If possible we buy our ingredients nearby in West Sussex but there are a few things we do have to go further afield for.

Machines

Machines make cars and microchips and rubber doorstops and bad pies. Hands make paintings and sculptures and igloos and Great Pies. When we decided to make our pies for other people lots of experts in stripy suites said we had to use a machine. They lectured us in teachery voices,?Its too much work to make all your pies by hand.? Maybe we are gluttons for punishment. But we don?t like machines- so we only use our hands.

Bad middles

In many ways middles are the most important bit. If it?s all gloopy and full of things that look weird it?s a bit scary. That?s why we only put things in that we?ve chosen really, really carefully. Another thing?.we don?t like stingy little middles in pies. That?s why we take lots of care to make sure each pie is filled right up to the top.

Poncy Food

We don?t like complicated food. Our pies are hearty British fodder. We like ours pies to be simple and make you feel good when you?ve finished. That?s it. No poncing around.
