Julian is a cool character which is a good thing - because he makes a lot of pies and most people might get a bit stressed at the prospect of making quite so many pies by hand. At the centre of the higgidy kitchen is one great big table around which Julian and his gaggle of pie-makers work. In order to make sure they get each pie just right they make them in batches no bigger than 20 at a time. They are all laid out on baking trays and filled carefully by hand to make sure every pie is full and delicious. If it's a potato topped pie he 'clumps' our special recipe potato mash on-top and if it's finished with a pastry hat then it's carefully placed on and painted with glaze. Only when Julian's sure they are just right does he pop them in the oven.
