Shirley has been at higgidy from the very start. She made the first higgidy pie and she must have enjoyed making it because she still makes them! She has become our pastry specialist. People write and tell us that they love our pastry. Well, they have Shirley and the rest of our pastry-makers to thank for that. She takes great care in getting it all just right. Of course it's all made in the kitchen from scratch... it takes a lot of mixing and she has to get her hands in there to get a feel for if its reached that perfect texture or not. After resting it for a couple of hours it's rolled out to just the right thickness. Then its cut into shape before it is carefully lined in the tin... and that's where the real skill comes in!
