Camilla's Creamy Parsnip Mash

When it's cold outside, we think it's nice to warm up with a nice simple creamy parsnip mash. This works well with a Higgidy Chicken Pot Pie with Ham & Leek and some onion gravy.

Ingredients

  • 4 medium floury potatoes
  • 4 large parsnips
  • A good knob of butter
  • A generous dollop of creme fraiche
  • A pinch of salt
  • A little grated nutmeg
  1. Peel the potatoes, wash the parsnips and cut the vegetables into chunks.
  2. Bring a pan of salted water to the boil and cook the potatoes and parsnips for 15 minutes until soft. Reserve a cup of the cooking water.
  3. Mash vigourously with the creme fraiche, butter and nutmeg until smooth and creamy.
  4. Serve with a Higgidy Chicken Pot Pie and onion gravy.
