Camilla's Spicy Chorizo Beans

This is such a quick recipe to prepare and delicious to eat. Sauteing the beans with the chorizo gives them a rich smokey flavour. It works really well served with a big wedge of Spinach, Feta & Roasted Red Pepper Quiche.
Ingredients
- 2 tablespoons olive oil
- 150g chorizo, sliced or roughly chopped
- 1 plump garlic cloves, peeled and sliced
- 2 shallots, peeled and sliced
- 500g fine green beans
- Salt
- Freshly ground black pepper
- A squeeze of fresh lemon juice
- Handful of fresh flat leaf parsly, roughly chopped
1. Heat the oil in a large saute pan, add the chorizo and cook for 1 minute or until it begins to 'catch' or turn golden.
2. Add the garlic and shallots. Cook for a couple of minutes to soften the onion.
3. Add the fine green beans and about 1cm deep of water. Cook on a high heat for about 5 minutes or until most of the water has bubbled away.
4. Add some seasoning, the fresh lemon juice and the flat leaf parsley. Toss well and serve warm with a large wedge of Higgidy quiche.
