We made our first 'Skinny Pie' just 6 months ago, and since then there has been a deluge of e-mails and messages politely requesting more. So with autumn fast approaching we worked on some autumnal flavours to compliment the whole 'leaves on the ground' and 'roasted nuts' feeling that we all get in these months.
Cue the Skinny Butternut Squash & Red Pepper Pie (complete with autumnal colours). Camilla's special recipe roasted butternut squash has been loaded into a distinctly unique caraway seeded shortcrust pastry along with ricotta and red peppers. Bursting with colour and warmth, this is a pie to enjoy as the nights draw in. Wonderful things really do come in small packages.
