Little Moroccan Vegetable & Feta Pie

Roasted Aubergines, feta and lentils with a spiced tomato sauce in a seeded shortcrust pastry case dotted with caraway seed.

What we suggest...

We would suggest a Tabbouleh inspired salad. It's a traditional Lebanese salad made with bulgur wheat (also known as cracked wheat and is widely available in supermarkets and health food shops). You can vary the proportions of bulgur wheat to veggies and herbs, so just use the recipe below as a guide.

Higgidy's Tabbouleh Salad

  • 225g bulgur wheat
  • 50g parsley, finely chopped
  • 40g mint leaves, finely chopped (no stalks)
  • 6 spring onions, finely chopped (including green parts)
  • 4 tablespoons fresh lemon juice
  • 5 tablespoons olive oil
  • Salt and freshly milled black pepper
  • 15cm cucumber, finely chopped
  • 1 red pepper, finely chopped
  • 225g cherry tomatoes, chopped into quarters
  • 1 small cos or little gem lettuce, finely chopped
  1. Prepare the bulgur wheat according to the on pack instructions.
  2. Combine the prepared parsley, mint, spring onions, lemon juice, olive oil, salt and pepper, stir into the bulgur wheat and leave to 'soak' for about 30mins.
  3. Combine all the remaining ingredients in a large bowl, then add the bulgur wheat mixture. Using your hands combine all the ingredients together, pile into a bowl and serve with warm Little Moroccan Vegetable and Feta Pies straight from the oven.

Ingredients:

Spiced Tomato, Aubergine & Feta Filling [67%], Seeded Shortcrust Pastry [25%], Glazed Puff Pastry Star (6%), Caraway Seeds + Lots of Hard Work.

Spiced Tomato, Aubergine & Feta Filling contains: Chopped Tomatoes [34%] (Tomatoes, Tomato Juice, Acidity Regulator: Citric Acid), Onion, Roasted Aubergine [13%], Feta [11%], Lentils[10%], Garlic Puree, Brown Sugar, Ginger Puree,  Olive Oil, Rapeseed Oil, Salt, Ground Coriander, Cumin Seed, Fennel Seed, Turmeric, Cayenne Pepper.

Seeded Shortcrust Pastry contains:  Wheat Flour, Water, Butter, Non-Hydrogenated Vegetable Shortening, Medium Fat Hard Cheese, Poppy Seed, Sesame Seed, Cayenne Pepper.

Glazed Puff Pastry Star contains: Wheat Flour, Free Range Egg Yolk Glaze, Vegetable Oil, Salt, Emulsifier: Mono & Diglycerides of Fatty Acids.

Ingredients are suitable for vegetarians

I am a vegetarian with very plain tastes. I dont like all the spices and garlic in lots of veggie dishes which cover the taste of the veggies. I have to say how much I enjoyed the vegetable and feta pie which was very tasty yet not too spicy for me.

My first experience of Higgidy was the Little Moroccan Vegetable and Feta Pie that was on the ‘reduced’ shelf in Waitrose. I enjoyed it so much that I bought it at full price on my next visit. Having now tried other tasty Higgidy flavours, this Moroccan beauty still tops the list of favourites for me. I have served it with red pepper salad and aubergine slices roasted in sesame oil.

There’s nothing quite like your spinach, feta and toasted pine nut pie, your balsamic onion and cheddar quiche or your Moroccan style thingy.
